The large loaves come out of the oven with a crisp crust and open crumb, baked exclusively with Mulino Marino flour from northern Italy. Wheat is just the start — spelt, einkorn, kamut and corn all make it into the dough. Add to that focaccia in sweet and savory, ciabatta and pizza straight from the tray. At Christmas, panettone joins the lineup. Walk through Markthalle Neun and you'll smell Sironi's ovens before you spot the stall.
