The noodles are pulled in-house every day, fresh and never bought in — that freshness carries the bowls. The broth simmers for hours on a bone base until it stands dense and pours pure umami. The signature is the Crispy Duck Ramen, with vegan variants for the other side of the table and gyoza as a side bite.
