Chef Jorge Josse Sion spent five years as sous-chef at the three-star Rutz under Marco Müller and is now a co-owner. Founders Maximilian Göllner and host Dan Kornienko wanted a fresh start, Jorge wanted out of the starred kitchen — by the house's own account a 'perfect match'. Sourdough from bakery Acid with whipped salted butter to begin. Signature starter: bitterballen, the Dutch specialty filled with pulled beef, served with sambal-oelek mayo.
