Behind the counter are Yumi Choi and Kiduk Reus, who traveled extensively to source beans directly from farmers, skipping the Fair-Trade label in favor of direct contact. The menu stays narrow on purpose: curated origins from Ethiopia, Rwanda and Brazil. Roasted for clarity, sweetness and expression instead of the dark-chocolate comfort zone.
