Baguettes come in South Vietnamese fashion, with Thai basil, coriander, and shiso in quantities you rarely see elsewhere. Two operators with stints at Ryong and Bonvivant assemble them live at the counter. The meat version runs on beef mince rolled in betel leaves. Vegan comes as homemade seitan with pickled vegetables and fermented tofu sauce. Coffee runs alongside, with breakfast, lunch, and dinner all on the menu.
