Sascha Kurgan has been running the kitchen since the spring — ex Joachim Wissler, and previously on this same pass. The star stays in the house. Two tasting menus side by side, vegetarian or fish and meat, paired with wine or a non-alcoholic flight — the latter mixed in-house, including a non-alcoholic vermouth from Muscatel grape juice. One tradition carries on: the onsen egg marinated in soy sauce, a long-standing Skykitchen signature. House-made sourdough on the table.
