Kushinoya on Bleibtreustraße has been the only Berlin address built around kushiage for years — a Japanese specialty almost nobody here has on the radar.
Kushiage are skewers fried in oil, and the kitchen turns out around thirty fresh variations daily. Vegetables, seafood and meat — bite-sized on long bamboo skewers. Breading and frying happen the moment before service, the crust sealing so tightly that twenty skewers land lighter than a plate of pasta. Everything comes a la minute, with house-made sauces and fresh raw vegetables. The cooks trained in Japan, and it shows in the timing between fryer and table. Eating is celebrated here.
