Tandoori Tikka with chicken is the best-known anchor, seasoned with chillies, cumin, coriander seeds and a touch of yoghurt. Paneer Tikka sets Indian curd cheese with sharp spices alongside it, and Paruppu, a South Indian lentil soup, carries the vegetarian line on its own terms.
