An omakase format inside old rooms reworked with meditative calm and high aesthetic precision. Behind the concept stands Japanese architect and designer Kuma Kenta, who arrived in Berlin in 2010 and opened the restaurant in 2015. The kitchen follows the Washoku philosophy: original flavour of the ingredients, simple preparation. The current nine-course menu opens with sake-marinated trout roe on asparagus and fermented spring turnip. Produce is bought fresh each day, calibrated to the reservation book.
