In southern Berlin, on the historic Gutshof Britz estate, Matthias Buchholz cooks the cuisine he actually wants to cook after a long career in fine dining: German, French-influenced, light — what he himself calls „dishes with character“.

Seasonal regional produce sits at the center, plated without flourish but with the precision of a chef who spent years at the top end. The estate is the other half: half-timbered buildings, cobblestone, rural quiet next to the listed Britz palace, summer terrace under apple trees. Britz isn't the first word that comes to mind for Berlin dining. That's exactly why it works.
